This product is a smooth and mild shiro miso paste with the natural sweetness of koji.Fermented for 3 to 6 months, it develops a gentle flavor with a soft 10% saltiness.
Our shiro white miso is easy to use, beginner-friendly, and ideal for everyday Japanese home cooking.

This is a normal result of ongoing fermentation and the natural reaction between amino acids and sugars (similar to the browning of bread or cheese).
